I Weird Al Yankovic’d the song because I heard it and now all I think about is pie with Thanksgiving around the corner (yes, I verbed his name). Pie seems to be focus of my thoughts after attending a Twin Peaks RR diner pop up serving Coop’s favorite cherry pie and the endless piles of apple and pumpkin pie at the grocery store. Holiday time is the hardest time of year for me to stay clean. Especially with sweets. So I wanted to make a pie that was tasty and healthy that would not leave me with sugar lows and loads of guilt. Crust of pecan, hazelnut, dates and a dash of rosemary. Filling of fresh pumpkin and sweet potato, sweetened with dates and banana, fattened with cashews, macadamia and coconut. With traditional spices that make up pumpkin pie plus a little Indian spice magic. No gluten,  no dairy, no eggs or refined sugar. This is my new holiday pumpkin sweet potato pie.

It’s a Flanily Affair: Soy-Less Vegan Salted Honey Caramel Flan

One of my favorite vegan plant based restaurants in LA, Gracias Madre, makes the most amazing egg-less foams for cocktails traditionally made with egg whites (like a pisco sour) and flans. No matter how stuffed I am, I order a flan for myself (and refuse to share it). I have been in a bit of a rut lately and haven’t been inspired to create as much, but we were invited to dinner party at our neighbors and I volunteered to bring dessert. It was a family style at home chill evening, but we knew they would step it up a notch because our neighbors are similar in nature to us. So I had to step up my dessert game. I finally decided it was time to try to create a plant based vegan flan at home that was not based in soy. I used a seaweed as my base. Yes you read that right, seaweed. And no it is not agar agar. Mixed it with some macadamia nuts, coconut fat and spices. Then let it set with a caramel sauce I made out of honey, coconut sugar and maple syrup. Inverted it. Topped it with zest of a lemon and touch of salt. O.M.G. Delicious. Silky. Creamy. Light. Flan. No eggs, no dairy, no refined sugars or soy.

Down the Hatch: Hatch Peppers Stuffed with Vegan, Grain-Free, Plant-Based “Meat” Topped with Dairy-Free Cilantro-Lime “Crema”

I have the chemical symbol for capsaicin, the active ingredient for a chili pepper, tattooed on my arm because I think spice adds to life. Since moving to Cali, I have been noticing hatch peppers – a large spicy chili from New Mexico – at the beginning of fall. I was feeling the need for some spice to shake up my life. Rather than just add the flavor of the hatch to a dish, I decided to stuff them with a plant-based meat made of mushrooms, veggies, nuts and seeds and top it with a plant based “crema” made from cashews, lime, nutritional yeast and cilantro. The filling was robust, light yet rich and satisfying and the “crema” provided the perfect sauce with acid to cut through the richness. The hatch…well the hatch was spicy spicy spicy.  Beware the hatch – the spice did not leave my fingertips for days even with multiple washings and milk soakings. If they are too spicy for you, stuff a jalapeno or a bell pepper. We tried them all and they were all equally amazing.

Little Deuce Mousse, You Don’t Know What I Got: Vegan Chocolate Mint Coconut Mousse with Gluten-free Salted Rosemary Citrus Olive Oil Crust

There is so much to talk about with this mousse. It started off as two separate culinary experiments – one with mousse made with seaweed as a thickener (yes, seaweed and no, it’s not agar) and another with a savory vegan shortbread. Each was really amazing on its own, but the cookie was not the cookie I wanted. I did not want to waste the dough. The creative kitchen witch came out and I combined the two. O. M. G. Bob Ross once said, “There are no mistakes, only happy accidents.” This was a magnificent accident. The two together form the perfect bite. The mousse is chocolatey, creamy, rich, yet light with a subtle hint of mint. There is a crunch with cacao nibs. The crust is textured, salted with subtle hints of rosemary and citrus. The whole dessert is sweetened only with dates. My mouth waters as I write this. I think I will have a slice while I type.

He who goes to bed hungry dreams of pancakes: flourless, dairy-free whole food protein pancakes with coconut milk date “syrup”

I absolutely love pancakes. I moved away from beautiful fluffy buttermilk pancakes to oat, almond cottage cheese pancakes – protein packed, no refined sugars or flours. Within the realm of flour/grain free pancakes I see recipes for pancakes made of banana, eggs and a  dollop of almond butter…but these are full of sugar. So I set out to make a whole food pancake, sweetened with only a little banana and date, loaded with protein and fiber. The winner was a butternut squash, almond butter, banana pancake sweetened with whole dates and topped with a coconut milk, date vanilla “syrup.” And what perfect timing! This was not planned (honestly!), but I just found out that today Tuesday, February 9 2016 is pancake day. Pancakes are in the air.

Lettuce wrap it up for the day: Soy-free Asian inspired mushroom, nut, seed, veggie lettuce cups

Today is the Chinese new year – year of the monkey. On my way home I smelled mushrooms cooking in some sort of soy sauce and it made me crave something Asian with mushrooms. I have really grown into mushrooms over the last few years. I used to hate them…all the way into adulthood until I finally tried a dish at one of my favorite vegetarian restaurants in New York City called Zen Palate. It was called mushroom forest and and was a chopped medley of shiitake, wheat gluten or soy, celery and other goodness that was eaten in a lettuce shell. Since coming to Calfornia, I have been making something similar, but without the wheat gluten or soy, and that is full of nuts and seeds for protein. It is shiitake, kale, carrot, pumpkin seed, sunflower seed, pine nut medley served in a lettuce wrap. And it was perfect for a new year celebration.

You had me at pizza: Flourless, dairy-free pizza with a cauliflower pine nut crust and nut-based faux mozz

I need pizza. I really do. But the Whole30 means no pizza for mama on our Friday night pizza night (even though we make the best, fresh from scratch, whole wheat or gluten free home made pizza). What really defines pizza is the crust and the cheese, so really I am SOOL while on Whole30, but I can make something that is compliant and kinda like pizza. Now if you are looking for something that truly tastes like pizza, made from whole ingredients without some fancy machinery and lots of time, please tell me the secret because in my opinion, you can replace the crust or replace the cheese but not both at the same time. When I am giving myself a break from Whole30 and eating dairy or gluten every so often, I place the faux cheese on a real crust or real cheese on faux crust, and voila, healthier pizza that tastes like pizza. This is a very tasty Whole30 compliant oooey gooey dairy-free faux mozz on a flourless, gluten-free, dairy-free cauliflower crust. It is tasty and satisfying and hits the spot on Friday night pizza night.

The squash look very different today: Gluten-free butternut squash, zucchini and sweet potato patties with a vegan zucchini, avocado, cashew aioli

I have been a bit homesick in the last few weeks. Maybe it was thinking about all the fun my cousins and brothers had over the holiday and missing the time spent together in 2015. Maybe it was missing my NYC friends and that community I had. Maybe it was missing the streets of NYC and my old apartment after seeing the building I lived in for 11 years in a scene in Mozart in the Jungle. On top of that, it was cold and I wanted to stay under the covers. Whatever it was, I wanted something comforting. But this whole food challenge does force me to think about how I can achieve comfort without relapsing into my old food habits. So I had to think about how I could make something that was tasty and veggieful with protein that could satisfy my craving and my body at the same time. And so a tasty snack and appetizer was born: Dairy and gluten-free butternut squash, zucchini, sweet potato patties with an avocado, zucchini and cashew aioli.

Saag it to me: Indian fusion breakfast with chard-spinach-almond veg, sweet potato hash, eggs and raw almond parmesan

I have had a fix on saag lately. It all came about while in France. I was asked to make a an Indian green side dish for Christmas dinner that would complement everyone else’s fish main course. Saag seemed to be the simplest dish for me to make last minute and that did not require me to purchase unusual spices that would require a specialty store – and Indian/Pakastani restaurants or stores for products are not common in France as they are in many states and cities in the US. In fact, to my surprise, much of what I saw listed or heard as being referred to as an Indian dish – such as a samosa – did not contain a single ingredient that is found in traditional Indian cuisine, but rather North African/Middle Eastern cuisine. So I knew I could make something simple and Indian inspired. And unlike traditional saag, I added a boost of protein and texture with almonds. It was so good – I put it on everything I ate. But the best application was brunch – in a dish of sweet potato hash, saag and an egg over easy with a raw almond parmesan.

I’m bout to get jalapeno business: Baked almond crusted jalapeno poppers with a faux cashew and pine nut based cheez

So I don’t follow, pay attention to or watch football (well, I should say US football. I do follow what football is to the rest of the world, especially around the World Cup). But one thing that I have liked in the past are the snacks and food associated it the game – the unhealthy, carb loaded, cheesy, fatty and sometimes spicy treats. Of course I almost never eat them. But with everyone so focused on football and speaking about it non stop compounded with the cold rainy weather and my current Whole30 restrictions, suddenly it is what I am craving. So what do I do – get down to business and make it my way – dairy-free, gluten-free, nut based and baked.
